Lettuce

Vegetable Description Washing/Storing General Use
Lettuce Large leaf vegetable. The color and leaf shape depend on the variety.
Submerge in cold water and gently swirl around. Let sit for a couple minutes; give the dirt time to settle to the bottom. Gently lift the lettuce from the water basin and pat or drip dry. How to perk up a lettuce head that is already wilted: Give lettuce a total immersion bath for about 1/2 hour. If head lettuce, slice off the end of the core first.
Salads and sandwiches.

We are having trouble filling the 'General Use' section of the lettuce chart. Aside from salads and sandwiches we were stuck for ideas. So we thought we'd give you recipes for salad dressings. We do like to get creative; if you have a unique use for lettuce, let us know!

Herb Balsamic Dressing

Ingredients:

  • 1/3 cup balsamic vinegar
  • Juice of 1 lemon
  • 2 tablespoons mixed chopped fresh basil, parsley, and thyme
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup olive oil
  • 1/3 cup canola or safflower oil

Method:

1. Combine the vinegar, lemon juice, herbs, and pepper in a small bowl and stir to mix.

2. Slowly add the olive oil and the canola oil and whisk until all the oil is incorporated. Refrigerate in an air-tight container until ready to use or up to 1 week.

Vinaigrette Dressing

Ingredients:

  • 1/2 cup olive or vegetable oil
  • 1/3 cup wine vinegar
  • 1 tablespoon dijon-style mustard
  • 1/2 teaspoon salt
  • 2 cloves garlic, crushed
  • 2 tablespoons fresh parsley, chopped

Method:

In a medium bowl, whisk ingredients together or, put all ingredients in a jar and shake. For a variety, add other fresh, chopped herbs such as tarragon or chives
