The turnip is a root vegetable, about the size of a baseball. Turnip greens are the leaf of the turnip plant. They have a slightly bitter taste, but the flavor is delicious. |
Cut the roots from the leaves and store separately (wrapped in plastic). Store the unwashed greens in a plastic bag; be sure to squeeze out excess air before putting them in the crisper compartment. Wash like you would lettuce, or any other green. |
For the root: they are great roasted with other root vegetables, mash them with potatoes for some flavor, or try making some slaw. You get the most nutrients from steaming the greens. For more flavor, saute in olive oil and drizzle with lemon juice. |
