Early green bean Ave. 5.5'' long. They are straight, tender, and stringless. HIgh in fiber and water. Delicious fresh. Recommended for freezing. |
Wash beans just before using, not before refrigerator storage. Store them in a plastic bag. To wash: wash in cold water. Let sand and soil sink to the bottom and lift beans out. Long Term Storage: Blanching and freezing is the easiest way to store summer beans. Blanch in boiling water for one minute and cool quickly in ice water for about 20 minutes. Freeze on a tray first and then transfer to a freezer bag. Enjoy throughout the winter! |
Eat them raw or cooked. Surprisingly, the vitamin content is said to improve slightly when cooked. |

Szechuan Green Beans
Prep time: 10 minutes
Cooking time: 10 minutes
- 1 lb beans
- 1 T garlic, chopped
- 1 T ginger, chopped
- 2 scallions, white parts only, chopped
- 1/2 t chili paste (or can use chili peppers)
- 1 T soy sauce
- 1/4 t salt, or to taste
- 2 T vegetable or peanut oil
Wash beans, dry thoroughly, and trim tops and bottoms.
Heat 1 T oil over medium heat. Add beans and stir-fry until they shrivel or "pucker" and turn brown (5-7 minutes). Remove beans and drain in colander or on paper towels.
Heat remaining oil over high heat. Add garlic, ginger, and scallions. Stir-fry for a few seconds, then add chili paste and stir-fry for a few more seconds until fragrant. Add beans and remaining ingredients. Mix together well, and serve.

Glazed Carrots and Green Beans
Ingredients
- 6 cups water
- 1/2 lb carrots, cut into 1 inch spears
- 1/2 lbs beans
- 1/2 cup chicken broth
- 1 T butter
- Salt and pepper to taste
In a large saucepan, bring water to a boil. Add carrots; cover and cook for 1 minute. Add beans; cover and cook 2 more minutes. Drain and immediately submerge in ice water. Once cool, drain and dry thoroughly. This step can be done in advance.
Place vegetables in large skillet. Add broth and butter. Bring to a boil and cook, uncovered, for 2-3 minutes, or until liquid has been reduced to about 2 teaspoons. Add seasoning, and cook for about one more minute.

Carmelized Green Beans with Pine Nuts
Prep time: 10 minutes
Total time: 45 minutes
- 1 T butter
- 1 T olive oil
- 1 1/2 lbs green beans, stem ends removed
- 2 T pine nuts
In large skillet, heat butter and oil over medium-low heat. Add green beans; partially cover and cook, tossing occasionally, until beans are tender and browned in spots, about 30 minutes. Add pine nuts; cook until nuts are toasted, about 5 minutes. Season with salt and pepper.
