Today's Harvest

Swiss Chard- A most wonderful vegetable coming in green, red, yellow and orange. The stems steam, stir fry or boil to a soft and tasty texture. Use raw in salads or cooked any number of ways. Great cooked in butter or olive oil and seasonings added to the hot greens.

Garlic- For your culinary pleasure. We think our garlic packs a special wallop!

Lettuce again

Kale- You get a potpourri of kale: Green Curly, Red Russian, Siberian or White Russian and Dinosaur Kale for a nutritious, steamed or stir-fried treat. Great also in soup and some even put it in salads, esp. the Red and White Russian which are not as tough and are closer to the texture of lettuce!

Squash- yellow, patty pan and some zucchini

Cucumber- the variety "Marketmore" has been a steady producer for us for several years.

Chili Peppers- This is a mild "hot" chili pepper variety. Sorry last week's supply never made it down.

Cherry Tomatoes- A few tasty "Sun Gold" cherry tomatoes. May feel this is the best cherry tom there is!

Tomatoes- Tomatoes are starting to come in. We are growing about a dozen varieties of all shapes, sizes and colors. I don't have time to fill you in this week, but remember that tomatoes will continue to ripen indoors, and even faster in the sun.

Herb- cilantro and dill. Some like cilantro chopped into salads. It's indispensable for salsa and used extensively in Mexican and Asian cooking. Try dill in sandwiches, salads and cooking.

Flowers- Queen Anne's lace, wild Joe Pye weed, asparagus plumes and green-centered cone flowers.


Recipe of the Week

Summer Squash Patties (from Vegweb)

4 green onion, chopped (white and green part)

2 tablespoon canola oil

2 medium yellow summer squash (or zucchini if you like)- grated

1 cup quick oats

2 medium red potatoes- grated

1/4 cup canola oil

1/2 teaspoon sea salt

2 eggs or egg-substitute

1/4 teaspoon fresh ground black pepper

Saute green onions in canola oil over medium heat in a no stick fry pan for about 2-3 minutes. Add grated potato and let cook about half way and then add summer squash. In a medium sized clean bowl, add oats, egg substitute, salt and pepper. Mix well. Add squash mixture and blend with a fork.

In a clean fry pan at a medium heat, warm the 1/4 cup canola oil. Spoon mixture in and form patties (8). Let brown 2-3 minutes and turn. Brown other side.

Great all on their own but good with yogurt or sour cream on top too!

We like these with a mess of greens on the side or a salad filled with fresh goodness from the garden (tomatoes, cucumbers, fresh dill and kohlrabi with a bit of cottage cheese is good with maybe some fresh chopped peppers).
